The oven typically features matched top and bottom heating coils—sometimes infrared tubes—to crisp the crust while melting cheese quickly. When you preheat, the internal thermostat ensures the chamber reaches the target temperature before you slide in the pizza.

The oven’s interior often includes a stone or ceramic deck that absorbs heat and radiates it upward into the dough, helping the base brown more evenly. Fans circulate hot air to improve browning, and adjustable vents let you vary airflow for a crisper crust or a softer interior.

Some pizza ovens also include programmable settings or dual convection fans so you can broil toppings or cook bread. High-end models use multiple heating zones with independent controls, letting you crisp the toppings without scorching the bottom.
